Catalano's Valentine Champagne Oysters

Recipe of the WeekThis recipe goes great with tiny fancy wrapped boxes (filled with bling), flowers, candy, and of course Champagne!

Yields:two romantic servings
INGREDIENTS:
1 cup champagne
2 cups heavy cream
1/4 cup butter
Salt and pepper to taste
Chopped chives for decoration
1 dozen oysters, shucked and shelled (save shells for refilling)
DIRECTIONS:
1. In a medium saucepan, reduce 1 cup of champagne to approx 1/4 cup of liquid.
2. Add the cream and reduce mixture to 1 cup of liquid.
3. Add butter and stir until butter melts and thickens the mixture, salt and pepper to taste.
4. Toss in the shucked oyster and remove from heat.
5. Place one oyster and some sauce in each saved shell.
6. Garnish with chives and serve immediately.
